Orange Creamsicle

I grew up in a town that was famous for its orange groves, so my childhood memories are perfumed with the fragrance of orange blossoms and the flavor of my grandmother’s fresh-squeezed orange juice. I loved orange-flavored anything. I was the weird one who preferred the orange Starburst over the pink. I even liked chocolate more if it had a hint of zest. And Orange Creamsicles? Those were my absolute favorite.

Every time the jingle-jangle of the ice cream truck warbled down my street, I’d drop whatever I was doing and scramble outside, full of excitement. Ice cream can do that to a kid. I was not one of those kids who stared lovingly at the rainbow-colored poster of frozen treats, trying to figure out which one to choose. It was an Orange Creamsicle every time. That neon, orange-flavored popsicle filled with creamy vanilla ice cream had the power to turn any humdrum afternoon into the BEST day.

It has been years since I chased the ice cream truck down the block, but the flavor combination of tangy orange and creamy vanilla is still a favorite pick-me-up. Now I can have it any time I want, thanks to this Orange Creamsicle Shakeology recipe. Vanilla Shakeology blended with ice and equal parts unsweetened almond milk and orange juice tastes surprisingly close to the original. I don’t normally buy orange juice, but I always have a few oranges in my fruit bowl. I squeeze an orange or two until I have half a cup of juice, then I use my microplane to shave a little orange zest into the blender for the finishing touch. With the first sip, I am a kid again, having an awesome day.

If you buy orange juice, but don’t plan to drink it all at once (we hope not!), try freezing the unused portion in an ice cube tray. Once they’re frozen, transfer the orange juice cubes to a plastic bag and store them in your freezer. One well of an ice cube tray usually holds about one fluid ounce, so when you’re thirsty for an Orange Creamsicle Shakeology, just pop four orange juice ice cubes (that equals half a cup) into the blender, along with the ice.

½ cup unsweetened almond milk (or low-fat milk)
½ cup 100% orange juice
1 scoop Vanilla Shakeology
1 cup ice

1. Place almond milk, orange juice, Shakeology, and ice in blender; cover. Blend until smooth.
